The Chiefs have a special name for that Dontari Poe formation

The Chiefs didn't hand the ball off to their 346-pound nose tackle on a whim.

They've been planning the formation since voluntary workouts. It even has a special name in Andy Reid's playbook, according to this summer article by Bob Gretz of BobGretz.com:

"The formation is called "Poe Heavy" and the Chiefs offense showed it several times in Wednesday’s practice," wrote Gretz. "That’s when nosetackleDontari Poe rolls into the offensive huddle as a fullback in short-yardage and goal-line situations"

"Poe Heavy" is the formation of the future. All NFL teams need to incorporate it in some form or fashion.

It was a work in progress back then. Gretz reported that the Chiefs deployed Poe as strictly a blocker, and never handed off to him all summer.

The Chargers probably assumed he'd be in that same role right before he steamrolled them for six.
